Suddenly Spring

After the SAT's & AP testing, all I want to do is celebrate... but there are still finals for school in a month&1/2 :\ To relieve stress I read blogs, then made Banana Bread Cookies! Yeah- thin, crunchy, and chewy cookies are always good...but I needed some relaxing cake-y-ness.


Ingredients: (adapted from this recipe)
1 medium banana, well mashed
1 tablespoon ground flax seed
3/4 cup rolled oats
3.5 tablespoon plant milk
1/2 tsp cinnamon
1/3 cup agave
2 tablespoon vegan margarine
1/3 cup peanut butter
2 tsp brown sugar, packed
1/2 tsp each, vanilla & cinnamon extract
3/4 cup all-purpose/whole wheat flour
1 tsp baking powder
1/4 tsp salt
1/2 cup chocolate chips (optional)
Directions:
Preheat oven to 350 degrees.
In a smallish bowl, mix the mashed banana with oats, flax seed, milk, agave, extracts, and cinnamon.
In another bowl, beat together the butter, peanut butter, and brown sugar.
Beat the banana mixture into the peanut butter. Sift in the flour, baking powder, and salt. Fold in the chocolate chips (if using).
Next, place small spoonfuls onto a cookie sheet and flatten a bit because these will not really spread.
Bake for 10-12 minutes. (Mine were a little dry after 12, though.)  Allow to cool on sheet before transferring to a plate. Indulge.

  1. YAY!!! So glad you found my blog so that now, I've found yours!! These cookies look totally amazing and you really got me craving chocolate now...not a hard thing to do though! haha can't wait to read more of your blog! and congrats on no more testing..ive still got act in june!
