No Matter How
Tough the Journey,
Recovery is Worth the Wait.

On the way home, my mom & I tried a Peanut Butter Cookie Larabar...I've tried to make them in the past, but this was my first real version and I thought it was dry and too peanut-y :\ guess it'll go in my oatmeal haha

For dinner I made Trader Joe's Tempeh, sugar snap peas,
and rice w/ chili sauce & Kikkoman teriyaki marinade...
Finished the night watching Cowboys & Aliens
-but didn't finish because we were all so tired!

Do one thing every day that scares you.

Sorry for the wait~ life goes by so fast! & I unconsciously forget to document it :(
Would you like me to recap the past months?

June- naught

July- People to People European adventure!

I didn't want it to end!
Toured through Italy, France, & England.. used all the French I have learned, stayed with a blind girl in a small city, saw many things for probably the only time, mais pas de romance. haha

August- I didn't expect my ED to follow me to Europe, but it did, to my dismay.. I thought that I was being rational avoiding all animal products-and so my absurdity led to an entire month in an intensive outpatient for EDNOS :(
I was in denial for almost the entire program, but I wanted to get back to normalcy because I was missing out on field hockey and wanted family support.

September- Did not get exercise privileges back, though was never that type before all of this.

October- I forget, but it probably involved lots of arguing about halloween candy towards the end.

November- We moved into mom's boyfriend's house on a cattle farm...whoo-hoo...How ironic? Ended with a stomach virus
...why has my attitude suddenly turned so pessimistic???

December- I started work at a grocery store! Enjoying the atmosphere here- everyone's in a good mood because of the unusually nice weather we've been experiencing (besides today, it was raining.. haha) Also, not feeling any anxiety about the people I will be interacting with, yay!

Suddenly Spring

After the SAT's & AP testing, all I want to do is celebrate... but there are still finals for school in a month&1/2 :\ To relieve stress I read blogs, then made Banana Bread Cookies! Yeah- thin, crunchy, and chewy cookies are always good...but I needed some relaxing cake-y-ness.

Ingredients: (adapted from this recipe)
1 medium banana, well mashed
1 tablespoon ground flax seed
3/4 cup rolled oats
3.5 tablespoon plant milk
1/2 tsp cinnamon
1/3 cup agave
2 tablespoon vegan margarine
1/3 cup peanut butter
2 tsp brown sugar, packed
1/2 tsp each, vanilla & cinnamon extract
3/4 cup all-purpose/whole wheat flour
1 tsp baking powder
1/4 tsp salt
1/2 cup chocolate chips (optional)
Directions:
Preheat oven to 350 degrees.
In a smallish bowl, mix the mashed banana with oats, flax seed, milk, agave, extracts, and cinnamon.
In another bowl, beat together the butter, peanut butter, and brown sugar.
Beat the banana mixture into the peanut butter. Sift in the flour, baking powder, and salt. Fold in the chocolate chips (if using).
Next, place small spoonfuls onto a cookie sheet and flatten a bit because these will not really spread.
Bake for 10-12 minutes. (Mine were a little dry after 12, though.)  Allow to cool on sheet before transferring to a plate. Indulge.

Over the Weekend

(Frost warning until May 15. Why can't I escape Jersey?? It was unusually cold, maybe because friday was the day i decided to wear shorts for the first time this season. After watching my younger brother's baseball game, we made a quick stop in town, before getting dropped off at my friend's for a sleepover. It's important to have at least a small group of friends throughout high school, because we are so easily misguided (ha ha).
Saturday, my mom and I drove into town to pick up dog food and go procrastination shopping (:
I got Clif bars, a wood bowl, vinegar, a shirt, and coconut milk & walnuts to make these almost sinful treats. Then we drove to see my mom's boyfriend at the fields.
Sunday was a mad race to get the house ready for the open house. We moved to the Delaware riverside 6 years ago! I secretly wish that we stay here at least until after I go to college.
Mondays are always boring...dinner was good- leftover coconut lentil soup w/ cornbread from veganomicon.

Why Am I Here?

I've been so busy with school recently, I don't know what prompted me to start a blog. Maybe to relieve some stress with writing?...yeah that's it. As with most blogs I guess, themes won't be predictable. I can promise that everything on here will aim to improve the lifestyle of my readers.
Over the next two weeks, I will be going to Six Flags, taking the SAT's, and the AP English Exam. Hopefully will fit in some personal stories/foodstuffs for ya :)

Today, while playing 'Hide and Seek' with a group of people, I randomly shouted "I see you" without actually spotting anyone. Two people came out from their hiding spot thinking that I had found them. I felt like I had doubled my productivity. MLIA.
